Beer-Battered Jalapeño Poppers

Ingredients
- for frying peanut oil
- 10 large jalapeños
- 1 (8 oz) package cream cheese
- 1/2 lb bulk sausage
- 10 slices bacon
- 2 cups all purpose flour
- 1 (10 oz) can beer
- 1/4 cup cold water
Directions
Heat a deep fryer filled with peanut oil to 350 °F.
Split each jalapeño with a paring knife without going all the way through, and remove the ribs and seeds. Use rubber gloves if you have them. Fill the jalapeño with cream cheese and sausage. Wrap each jalapeño with a slice of bacon and secure with toothpicks.
To make the batter, add flour to a large bowl and season with salt and pepper. Slowly pour in the beer then water and whisk until smooth. Dip jalapeños in batter.
Carefully add the jalapeño to the hot oil and fry until golden and brown, about 5 minutes. Remove to a paper towel lined sheet tray to drain.
