Ingredients

  • 1 lb (about 2), peeled and thinly sliced cucumbers
  • 1 pint halved cherry tomatoes
  • 1/2 very thinly sliced Vidalia onion
  • 2 tablespoons chopped fresh parsley leaves
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • salt
  • freshly ground black pepper

Directions

In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.

I haven't made this one yet but one very similar and it had fresh dill in it. I will be making this for Easter for sure!

My husband made this and added a few things. Instead of parsley he used fresh chopped basil, a little sugar and a dash of Zesty Italian dressing. Also added sliced black olives. It was out of this world good.
