Ingredients

  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/4 teaspoon (or 1 tablespoon white corn syrup) cream of tartar
  • 1 1/2 cup granulated sugar
  • 2 egg whites
  • 1 1/2 teaspoon vanilla extract

Directions

Place sugar, cream of tartar or corn syrup, salt, water and egg whites into a mixing bowl and beat for 1 minute with a handheld electric mixer.

Using the double boiler method, place the bowl over the top of rapidly boiling water, making sure that boiling water does not touch the bottom of the top bowl. (If this happens, it could cause your frosting to become grainy.) Beat constantly on high speed with electric mixer for 7 minutes. Remove the bowl from the boiler and gently stir in vanilla with a spatula.

After trying a recipe in a cookbook that I totally bombed and had to throw out. I tried this recipe and first try it worked!!!!! YEAH... I didn't put the salt in it..not sure what that is for or does but it turned out good. I may have over cooked although I timed it and let it go 7 min. but I had some that stuck to the lower edge of pot that was crusty the rest of it was marshmellow cream shiny though.

Jamies Coconut cake receipe was incomplete. Finally got the directions for the icing, but am not sure how to ice it since you have the last of the filling on top of the cake. Can't find this anywhere. Please advise as I need to make this on Sun. for my son's birthday. Thanks
