The cooler weather, at least in most places around the country, seems to yield fruits and veggies that lend themselves towards comforting dishes, which is perfect since cooler weather calls for a little comfort. That pumpkin pairs perfectly with orzo, the cauliflower makes an incredible low-carb pizza crust, and the eggplant is the star of a deliciously cheesy eggplant parmigiana.
