Bring comfort and joy to your family with this Christmas breakfast casserole recipe. For simplicity, you can make it the night before, refrigerate it, and bake it in the morning!

Cook time: 60 minutes

Servings: 6 to 8

Ingredients

  • 8 thick slices country white bread, buttered and cubed
  • 1 lb loose pork breakfast sausage
  • 1 tablespoon chopped fresh sage
  • 1 cup shredded white cheddar cheese
  • 1 cup yellow shredded sharp cheddar cheese
  • 7 eggs
  • 3 cups milk
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dry mustard
  • salt, to taste
  • black pepper, to taste
  • Paula Deen's Hot Sauce

Directions

Prepare a 9×13 baking dish with non-stick cooking spray.

In a large skillet over medium-high heat, add the loose pork breakfast sausage, using a wooden spoon break up the sausage into crumble sized pieces, cook until browned, about 5-10 minutes. Fold in chopped sage after cooked.

Meanwhile; Into the prepared baking dish, add the buttered and cubed bread, Sprinkle the sausage over the bread, make sure to distribute evenly, then sprinkle with cheese.

In a medium bowl, add eggs, milk, cayenne, dry mustard, salt and pepper to taste; whisk together. Pour over the bread, sausage and cheese.

Cover with plastic wrap and refrigerate.

The next morning, preheat the oven to 350º. Bake for 1 hour, or until bubbly and hot. Serve hot.

I’ve made this amazing recipe many times. Some tips: 1. It’s better with 8 eggs, 2 cups half & half 2. Italian sausage is a good substitute 3. Drain sausage very well. 4. Slice/cube a large bakery loaf, crusts removed. Dry in a 250F oven for 5 min. Cubes should be slightly crispy, not crunchy. Just a bit more than enough to cover the bottom of the pan 5. Casserole can take up to 12oz cheese. Gouda/Fontina/Guyere is a nice addition. 6. Whisk eggs/cream in a pitcher. Much easier to pour. Add 1/2 tsp salt to this. 7. Combine bread cubes/sausage/some of the cheese in the pan, top with remaining cheese. Pour custard over the top. Use a spoon to dunk any dry bread cube. 8. Bake at 350F (non-convection), uncovered. It’s not done until the top is light golden-brown. This crispy top is the best part!

Happy Holidays to the Deen Family. I made this for breakfast today to test and it so scrumptious and hot. Y'all crack me up, I wish I lived closer but live in Las Vegas now. Original Atlanta, Georgia born and the south is always with me wherever I live.

It would be better to seperate into two containers and cook one and freeze the other uncooked one!

If I substitute seasoned croutons for the bread, what amount should I use?

The egg & milk mixture will soften up the croutons, so they will work great! Just use enough to cover the top of the casserole.

So at the top of this recipe it says COOK TIME: 20 min but at the bottom of the recipe it says bake at 350 for 60 min. Which time should I bake it for?
