Lady and Sons’ Chicken in Wine Sauce

Ingredients

  • 4 large skinless boneless chicken breasts
  • 4 tablespoons melted, plus more for casserole butter
  • 6 oz (about 8 slices) Swiss cheese
  • 1 10 3/4-ounce can condensed cream of chicken soup
  • 1/4 cup white wine
  • 1 cup crushed herb-flavored stuffing mix
  • kosher salt
  • ground black pepper

Directions

Preheat the oven to 350 degrees F.

Add the chicken to a shallow buttered casserole and season with salt and pepper, to taste. Layer the cheese slices on top.

In a medium bowl, add the soup and the wine, season with salt and pepper and pour over the cheese. Sprinkle stuffing mix on top and drizzle with melted butter.* Bake for 45 minutes. Remove from the oven and serve.

*Cook’s Note: If desired use more butter.

This was always requested on the rotation for Wednesday night church dinners from 2004! I was looking for a good chicken recipe to eat 1 freeze 2 and this recipe plus the comments and hints in the reviews brought back many good memories. This recipe has never failed me, whether for 2 or 200! If cooking for large groups or easy individual portions, I follow the recipe pretty much as written except I always mix the butter into the stuffing mix topping and use at least double the amount of topping. I typically use chicken tenders with 1/3 or 1/2 slice of cheese, then top with sauce and topping. If for large group, I cook on the large trays. These can be frozen in individual portions after cooking if desired. I also love this recipe as more of a casserole as others have suggested. Sometimes I even add a cup of rice with two cups broth or water to the bottom, top with chicken and cook 30 minutes before adding the sauce & topping.

I like to cube the chicken. The chicken breast is too big of a serving for us. Also cooks faster.

I've been making this for years(1990)the only thing that I do is add butter to stuffing mix before putting on top. Family loves its great taste
