Pumpkin Cheesecake

Ingredients
Crust
- 1¾ cups graham cracker crumbs
- 3 tablespoons light brown sugar
- ½ teaspoon ground cinnamon
- 1 stick salted butter, melted
- 3 (8-ounce) packages at room temperature cream cheese
- 1 (15-ounce) can pureed pumpkin
- 4 eggs (3 eggs plus 1 yolk)
- ¼ cup sour cream
- 1½ cups sugar
- ½ teaspoon ground cinnamon
- ⅛ teaspoon fresh ground nutmeg
- ⅛ teaspoon ground cloves
- 2 tablespoons all purpose flour
- 1 teaspoon vanilla extract
Directions
Crust
Preheat oven to 350 °F.
In medium bowl, combine crumbs, sugar and ½ teaspoon cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.
Filling
Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

The brown sugar is for the crust!
The directions cook in oven for 1 hour and remove, sit for 15 min. But in the Q&A it was answered to bake 1 hr and sit in the oven an additional 15 min., assuming you turn the oven off. Which is correct? Thanks
If you are referring to user's comments regarding the recipe you are certainly okay to follow their recommendation. It does sound like they are telling you to turn the oven off for that 15 minutes. It could be their oven is not calibrated correctly and keeping it in the still hot oven helps finish off the cheesecake.
Yes you can certainly use mini cheesecake pans instead of the larger one! And it freezes well for about a month!
