Pumpkin Cheesecake

Ingredients

Crust

  • 1¾ cups graham cracker crumbs
  • 3 tablespoons light brown sugar
  • ½ teaspoon ground cinnamon
  • 1 stick salted butter, melted
  • 3 (8-ounce) packages at room temperature cream cheese
  • 1 (15-ounce) can pureed pumpkin
  • 4 eggs (3 eggs plus 1 yolk)
  • ¼ cup sour cream
  • 1½ cups sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon fresh ground nutmeg
  • ⅛ teaspoon ground cloves
  • 2 tablespoons all purpose flour
  • 1 teaspoon vanilla extract

Directions

Crust

Preheat oven to 350 °F.

In medium bowl, combine crumbs, sugar and ½ teaspoon cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.

 

Filling

Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.

Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

I followed the directions to a T. Took the cheesecake out at 60 minutes was letting it cool on the counter it was about 10 minutes and a big crack right down the middle. No, my windows were not open and it was warm in my house. Does anyone know why this would have happened? It wants a rating I don't know what it takes like since it's now in my refrigerator for 4 hours as directions say so I'll just give it a 1 rating for the big crack in the center of the cake.

I started making this recipe from Paula Deen about five years ago or so, and it is so delicious. I pull out the recipe every fall. It made me smile when I saw it come in an email today from the mailing list so I had to come here to give it a review.

The directions cook in oven for 1 hour and remove, sit for 15 min.  But in the Q&A it was answered to bake 1 hr and sit in the oven an additional 15 min., assuming you turn the oven off.  Which is correct? Thanks

If you are referring to user's comments regarding the recipe you are certainly okay to follow their recommendation. It does sound like they are telling you to turn the oven off for that 15 minutes. It could be their oven is not calibrated correctly and keeping it in the still hot oven helps finish off the cheesecake.

Can this be made in a mini cheesecake pan and can you freeze them?

Yes you can certainly use mini cheesecake pans instead of the larger one! And it freezes well for about a month!

Hi, is there any thing that I can substitute for the sour cream? Living out of USA, difficult to find it.. thanks

Yes, though you may need to adjust the cooking time and keep a closer eye on it.

Says cook time is 25 minutes. But says in directions to bake for 1 hour.

Always follow the directions listed under the instructions. The cheesecake needs to bake for an hour and then be left in the oven for another 15 minutes.

No, the recipe calls for 4 eggs. You need 3 full eggs plus the yolk of one extra, for a total of 4.
