This zucchini bread recipe is a quick and easy sweet bread that is great for breakfast or snacking. Plus, it makes for a heartfelt homemade hostess gift!

Prep time: 15 minutes

Cook time: 60 minutes

Servings: 10

Ingredients

  • 2 cups grated zucchini
  • 1/3 cup water
  • 4 beaten eggs
  • 1 cup vegetable oil
  • 3 cups sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon ground nutmeg
  • 1 1/2 teaspoons salt
  • 3 1/4 cups all purpose flour
  • 1 teaspoon lemon juice
  • 1 cup chopped (or pecans) walnuts

Directions

Preheat oven to 350 °F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes. Makes 2 loaves.

So many rave reviews about this, and yet it was a total disappointment for me. And I make my living, literally get paid, to be a baker. The middle of the cake sank, the top of the cake look like a lava rock, you know full of little bubbles, and the cake was stuck in the pan so that about a half an inch on the bottom never came out. So does somebody who had luck with this want to tell me what I did wrong?

Baking mine right now. It made 9 mini loaves, not five. Hoping they taste as good as they smell! PS--substituted chocolate chips for pecans.

I have a lot of zucchini from my garden and decided to make some zucchini bread with it to give to family as a gift at a birthday dinner. When I read the recipe I was surprised that I only had to spray the pans with cooking spray..I cook and bake a lot and on all my bread recipes I grease and flour the pan per the recipe. I wish I would have just done that because I spent time and expense on making this recipe and both my breads are stuck in the pan...SO frustrated!!!!!!!!!!!!

Sinking Zucchini bread
Every time I make this recipe it rises fine until just before the timer goes off then it sinks. Any suggestions of how to fix this problem?

Try being a little gentler when you're mixing and mix a little slower. If you mix too fast or too hard, you create a lot of air bubbles in the batter, which makes the bread unstable and leads to a sunk middle.
