Mini Chocolate Eclairs

Ingredients

Pastry

  • 1 cup water
  • 1 stick butter
  • 1 cup all-purpose flour, sifted
  • 4 eggs

Filling

  • 3 cups milk
  • 2 cups sugar
  • ½ teaspoon salt
  • 6 tablespoons all-purpose flour, sifted
  • 3 eggs, beaten
  • 2 teaspoons vanilla

Icing

  • 2 (1-oz) squares chocolate
  • ¾ cup sugar
  • 1 cup whipping cream

Directions

Pastry

Heat water and butter to boiling point. Add flour and stir constantly until mixture is smooth and forms a ball when tested in cold water. Remove from heat and let cool. Beat in 4 eggs, one at a time. Drop dough from teaspoon to form small eclairs onto greased cookie sheet. Bake at 400°F for approximately 30 minutes or until light brown. Set aside to cool.

Filling

Combin milk, sugar, salt and flour; cook slowly until thickens. Add 3 beaten eggs and continue to cook until mixture is even thicker. Remove from heat, cool and add vanilla. With a serrated knife, slice pastry puffs longwise, but not all the way through. Pipe custard mixture into the center of the cooled eclair

Icing

Melt chocolate. Add sugar and cream. Cook over medium heat until soft ball stage. Let cool and beat until smooth.

Ice tops of the cooled eclairs.

Was looking for several recipes and didn't even think to look for them on your sight. Wow, was I surprised about the number of recipes on this sight. Every recipe I looked for was available. I was raised in the south. I didn't know that Brunswick stew ever existed. I lived on North Carolina where I first tasted it. I was hooked. My ex-husband's family made in a cast iron pot outside over a fire. They fixed enough for family members to freeze. I have tried, but not hard enough to find the recipe. I was happy to find (excited} your recipe and some recipes for quiche. I bring something to Sunday School practically every week. I have received many compliments and I enjoy doing it. I know they will absolutely love the quiche recipes (especially the younger ladies who are absolutely in good shape and won't dare eat some of the treats). I believe it is because they don't want other girls to see them. You are so down to earth and so is your family. I have always wanted to visit your restaurant. Hey Paula, My favorite recipe from you is the pumpkin bar with the cream cheese frosting. Everyone goes nuts for that!! Keep your head up we all know the REAL Paula!!

I wish you can come up with a kool ade pie recipe....with sugar and cream cheese.....and be real creamy....i asked about amost a year.....? I want the pie to be different.........
