Lemon Tarts

Ingredients
- 4 beaten eggs
- 2/3 cup fresh lemon juice
- 2 tablespoons sour cream
- 1/2 cup confectioner's sugar
- 6 frozen mini tart shells
- optional topping whipped cream
Directions
Mix eggs, lemon juice, sour cream and confectioner’s sugar in a large mixing bowl. Add mixture to empty frozen tart shells. Bake in oven for 15-18 minutes at 325 °F. Top with whipped cream. (optional)
