Corrie’s Kentucky Pie

Servings: 10

Ingredients

  • 2 teaspoons vanilla extract
  • 1 cup (2 sticks) melted butter
  • 1 cup sifted self rising flour
  • 1 (12 oz) package melted semisweet chocolate morsels
  • 2 cups sugar
  • 4 large lightly beaten eggs
  • 2 cups chopped pecans
  • 2 (9 inch) or 3 (9 inch) unbaked regular pie shells deep dish unbaked pie shells
  • optional ice cream

Directions

Preheat oven to 350 °F.

Combine eggs, sugar and melted chocolate in large bowl. Add flour and mix well, stirring in remaining ingredients except for pie shells. Bake 50-60 minutes.

Serve warm with ice cream. Freezes well!!

"There seems to me something wrong with these directions for Corries Kentucky Pie. I'm a bit confused. All ingredients are listed, but not all seem to be in the directions. Are the crusts baked at the same time as the filling or, are they baked first. I'm not a cook or baker so I guess I really need a bit more step by step directions. Thank you scarlett mcmahon By Scarlett McMahon on May 01, 2012" Put the filling in the pie crust and bake together, haha. Everything bakes at the same time. 8)

My son and I were watching you make this pie. Now we can not wait to try it.

Made the pies and we had a slice after dinner that night. Was way too sweet and started to toss it in the trash. Decided to try it again the next day and it was delicious. This pie gets better the longer it sits. The second and third day gives it time to settle. Definately gonna make this pie again! Thanks Paula!!!
