Butter Pecan Ice Cream

Ingredients

  • 3 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 (3 3/4 oz) package instant French vanilla pudding mix
  • 1 cup sugar
  • 1 (13 oz) can evaporated milk
  • 2/3 cup chopped pecans
  • 1 tablespoon unsalted butter

Directions

Melt the butter in a small saucepan. Over low heat, cook the pecans until they are lightly browned, about 3 minutes. Place on a paper towel to drain and cool. In an 8-cup measuring cup with a spout, combine the remaining ingredients. Whisk until the sugar is dissolved. Pour the mixture into an ice cream maker and freeze according to manufacturer’s instructions. Add the pecans 10 minutes into the freezing. Makes 2 quarts.

Could this be made some how without a ice cream mixer? The reason I ask is because churned Ice Cream is the old time way with the churn by hand mixer we had growing up and I can't find one! The one we had as kids is wore out from us using it as adults..my mom n dads favorite Ice is Butter Pecan n my mom has had a massive stroke in Nursing home for rehab n we wanted to do a cookout with them my brothers and I and would love to have this for them. Can you please help me Paula my Mom watched you all the time please help me. Thanks, Tammy S South Carolina

To Angie Reneau, If you happen to read this. I have recently lost about 40 pounds. I am super excited about that (I went from an 18 to a 12!!!)! I have a big sweet tooth so it wasn't looking good for me. I am a stay at home mom, so I try to walk with my daughter, she's almost 2, about a mile everyday. That is the only thing I've changed and the pounds started melting away. Well,that and my daughter is into everything and I also have to keep moving to keep up with her. Walking has increased my energy as well. I am able to keep up with her. Good luck to you on your journey. It isn't easy, but it is worth it in the end. Torri

How would I make this for a 6 quart freezer. Surely you wouldn’t triple everything
