Hi Paula. I just cooked the absolute worst fried catfish, so bad my little girl said "YUCK!" My mistake: I got the recipe from Saveur.com. It said to put the seasoning in with the cornmeal and flour, then dredge the fish in it. The fish ends up completely flavorless! After dinner, I checked your site, and sure enough, you say to season the fish first, and then dredge it. I am sooo sorry I did not consult your site first. My family loves your food, and I appreciate all that you do for families everywhere. Warm Regards, Kim Sadowski
