Paula Deen Cuts the Fat, 250 Favorite Recipes All Lightened Up, Exclusive: Lemon Chicken with Artichokes

By

Some days I like a creamy chicken dish and other days I crave something brighter like this fresh and zingy lemon and artichoke chicken. While it’s light and refreshing, it’s also super satisfying. Make sure you serve it with bread or potatoes to sop up the delicious sauce.

Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts (about 3)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup all-purpose flour
  • 2 tablespoons olive oil
  • ½ cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice, plus more to taste
  • 1 can (14 ounces) artichoke hearts, drained and coarsely chopped
  • 2 teaspoons drained capers (optional)
  • 1 tablespoon unsalted butter
  • Chopped fresh basil, for serving

Directions

  1. Slice each chicken breast in half horizontally (you should now have about 6 thin pieces of chicken). In a shallow bowl or pie plate, whisk together the salt, pepper, and flour. Dip the chicken pieces in the seasoned flour to coat all over. Gently shake each piece to remove the excess.
  2. In a large skillet, heat the oil over medium-high heat. Add the chicken, in batches if necessary, and cook without moving, until golden, 2 to 3 minutes. Flip and cook until no longer pink, 2 to 3 minutes more. Transfer the chicken to a plate and cover with aluminum foil to keep warm.
  3. Add the chicken broth and lemon juice to the skillet and give the bottom of the skillet a good scrape to pick up any brown bits stuck to the bottom. Simmer until bubbling, 3 to 4 minutes. Stir in the artichokes and capers (if using) and cook for 1 minute. Swirl in the butter. Give the sauce a taste and add more lemon juice if you think it needs it. Spoon the sauce over the chicken and sprinkle with basil before serving.

Paula Deen - As a young girl growing up in Albany, Georgia, Paula Deen never dreamed she would become an American icon. As a young mother, Paula was living the American dream — married to her high school sweetheart and raising two adorable boys — when tragedy struck. Her parents died, her marriage failed and she began a prolonged battle with agoraphobia. With her boys in their teens and her family near homelessness, Paula took her last $200, reached deep inside her soul and started The Bag Lady, a home-based catering company that marked the start of Deen's professional cooking career. With sons Jamie and Bobby delivering lunch-and-love-in-a-bag, beginning in June 1989, Paula turned her life around by sharing what she knew best, traditional Southern cooking.
