Patty’s Pecan Pie

Prep time: 10 minutes + 24 hours

Cook time: 25 minutes

Servings: Makes 1 (9-inch) pie

Ingredients

  • 3 egg whites
  • 1 teaspoon baking powder
  • 1 cup sugar
  • ¾ cup graham cracker crumbs
  • 1 cup chopped pecans
  • 1 teaspoon vanilla
  • sweetened whipped cream, for serving

Directions

Preheat oven to 350˚F and grease the pie plate.

Beat the egg whites until stiff.

Fold in the baking powder, sugar, graham cracker crumbs, pecans, and vanilla. Pour into the pie plate.

Bake for 25 minutes. Let cool, and then flatten the top. Let stand in the refrigerator for 24 hours or overnight.

Top with a generous serving of sweetened whipped cream before serving.
