White Bean-Cake Sandwiches

Ingredients
White Bean-Cake Sandwiches
- 1-2 tablespoons oil
- 1½ cups cooked navy beans, recipe below
- 2 tablespoons flour
- 8 pieces white bread
- mayonnaise
- 1 medium onion, sliced
Navy Beans
- 1 (1-pound) bag dried white navy beans, soaked overnight if you have time
- ½ pound hog jowl, or ham hocks if you're unable to find hog jowl, chopped coarsely
- salt, to taste
- black pepper , to taste
Directions
White Bean-Cake Sandwiches
Add oil to a hot skillet. In a medium bowl, coarsely mash beans with a fork and add flour until well combined. You may need to adjust the amount of flour based on the wetness of your beans.
Once skillet is ready add a large scoop of the bean mixture to the hot pan (enough to fit into white bread slices). Let cook on one side for 5-10 minutes and then flip and cook the other side until both are browned.
Once cooked, remove from pan and drain on a paper towel.
For each sandwich, spread mayonnaise on two pieces of white bread. Place patty on one piece of bread and top with onions. Top with the second piece of bread.
Navy Beans
Drain and rinse the beans and add to a large pot with chopped hog jowl. Add enough water to cover the beans. Bring to a boil and then let simmer for 2-3 hours. Add in salt and pepper, to taste.
Cook’s Note: If soaking overnight, they tend to cook quicker.
