Slow Cooker Smoked Sausage and Sauerkraut Soup

Ingredients
- 1 lb sliced smoked sausage
- 5 cups chicken stock
- 1 lb drained sauerkraut
- 2 cups sliced fresh mushrooms
- 2 large diced carrots
- 3 stalks sliced celery
- 3 medium diced red potatoes
- 1 medium finely diced sweet onion
- 1 can diced tomatoes
- 2 teaspoons dried dill
- 1 pinch (optional) caraway seeds
- 6 strips cooked crisp and crumbled (optional) bacon
- 1/3 cup finely grated (optional) Parmesan cheese
Directions
Stir together all ingredients in a slow cooker. Cover and cook on low setting for 10-12 hours or on high setting for 5-6 hours. To serve, garnish with crumbled bacon and Parmesan cheese and serve with crusty bread.
