Green Beans with New Potatoes

Fresh green beans are always best and a little bacon never hurts.

Ingredients:

1/2   stick butter, sliced
1   onion, cut into slivers
12   small red potatoes
2-3 teaspoon Paula Deen’s House Seasoning
2 cup chicken broth plus more if needed
1/4 cup bacon grease
1/4 lb salt pork, sliced
3 lb fresh green beans
pepper, to taste

Directions

Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.

Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.

While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.

This recipe is absolutely delicious! They taste exactly like my Grandma's did many years ago. Thanks Paula, for sharing the recipe and bringing back many happy memories of my Grandma, including sitting of the big wrap around porch, snapping and shelling peas with my cousins! OMGoodness! These are amazing!!! Just like my Mammaw would make! I always wanted to know how she made them... know I know. Thanks, Paula! Second time around, I cut down on the House Seasoning. The salt pork really adds enough for DH. I actually made a batch with canned green beans (I was in a pinch.) They weren't bad but fresh is MUCH better. Canned beans need less cooking time, obviously. THanks again!

Now this is real old timey southern cooking at its best. You just have to have bacon grease and salt pork to make it authentic. Good job-brought back so many wonderful memories of Mom.

These are the green beans and new potatoes I grew up on and loved. When I tried to make them as an adult, I never could get them to taste like I remembered and I realized that I had waited too long...the kin folks that had made them had passed on. Not only do these taste fantastic, but they brought back all those wonderful memories.
