Nana’s Blueberry Muffins

Ingredients

  • 1/2 cup butter, at room temperature
  • 1 1/4 cups sugar, plus 2 teaspoons, divided
  • 2 eggs
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 1/2 cups fresh blueberries

Directions

Preheat oven to 350 °F. Line a 12 cup muffin tin with paper liners and set aside.

In a large mixing bowl, beat butter and 1 1/4 cups sugar until fluffy and pale in color. Add in eggs one at a time, beating well after each addition.

In a separate mixing bowl, sift together flour, baking powder and salt. Add the flour mixture to the butter mixture alternating with the milk until well incorporated and being careful not to over mix. Gently fold in the fresh blueberries.

Scoop batter into the paper lined muffin tin and sprinkle the tops with the remaining 2 teaspoons sugar. Bake for 25-30 minutes or until puffy and golden brown.

Made this for my brother and his wife. Since my sister-in-law is a dialysis patient she can have Peaches, Apples and Blueberries to eat. I made this blueberry muffin. OMG! Not one was left. Will make this again. This is my go to recipe. Thank you Paula.

Y’all, these muffins are the absolute best I have ever had!! The texture, the pop of blueberry in nearly every bite...sigh...Miss Paula has done it again.

I have made a LOT of blueberry muffins in my life (almost 60) and out of all of them, these are the best! After eating the first batch, the following days you can just zap in the microwave for 15 seconds (unfrozen) and they are to die for. They almost remind me of a homemade cobbler. Usually when I make muffins I heat them up in a toaster oven or oven to get the crispiness on the outside again. No need to do that on these muffins. Try them once and you will see! I did nothing to alter the recipe. Thank you Paula!!!
