Fresh Fruit Salad with Creamy Custard

Ingredients

  • 6 peeled and chopped kiwis
  • 2 ripe peeled, cored, and sliced mangoes
  • 1 peeled, cored, and chopped melon
  • 1 quart hulled and quartered strawberries
  • 1 quart blackberries
  • 1/2 quart blueberries
  • 1 1/2 cups whole milk
  • 2/3 cup sugar
  • 6 large egg yolks
  • 2 tablespoons softened unsalted butter
  • 1/2 teaspoon vanilla extract

Directions

For the fruit:

Place fruit into a large bowl and toss together.

For the custard:

In a medium saucepan over medium heat, whisk milk and sugar constantly.

In a medium bowl, whisk together the egg yolks. Slowly incorporate the hot milk into the egg mixture. Return the mixture to the saucepan. Heat the custard over low heat about 5 minutes or until thickened slightly, stirring constantly. (It should be thick enough to coat the back of a spoon. Do not let the mixture come to a simmer or the eggs will curdle.)

Remove from heat and melt the butter into custard. Add vanilla. Immediately strain the custard into a small bowl. Place in refrigerator to cool.

Drizzle over fruit and serve.

Just wondering if you would have any LOW-CAB recipes for Heathly Living, such as Low-Cab.

Hi I always use Splenda for my sugar and I use Fairlife Fat Free Milk as it's about 50% lower in sugar that regular milk. That should be better for diabetics and low-carb folks like myself. Works great for me.

Southern Greetings, Paula..... I have tried many of your recipes and love them all as do those who I serve them to. I am diabetic tho and cannot partake of many due to sugar and salt volumes. Have you thought of doing a diabetic cook book? Love to see one from you. Also, would you consider doing a show just on diabetic recipes? Many out in your audience would love that. Just curious. Why do your sons not have the southern drawl you have? I love it, but don't hear it in their speech patterns. I am a big fan, some day I hope to come to Savannah to Mother and Sons. In the meantime, I am watching your cooking shows daily.

I love your receipes and i have tried many of them. I do not live far from Cherokee NC and tried to get tickets to your opening and was unable to do so.
