Citrusy Summer Ice Cubes

Ingredients
- 16 sliced kumquats
- 12 torn mint leaves
- 3/4 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup fresh squeezed lime juice
Directions
Thinly slice the kumquats before adding to the ice cube tray. Divide the mint leaves and kumquats into each ice cube compartment of the tray. Add the orange juice, lemon juice, and lime juice to a 2 cup glass measuring cup and combine. Add to the ice cube tray and Freeze until solid, at least 4 hours. Enjoy the ice cubes in a tall glass with some chilled white wine topped with seltzer for the ultimate citrusy wine spritzer, or use to revitalize some plain sparkling water with a hint of citrusy sweetness!
Alternative: If you can’t find kumquats you can also thinly slice lemon or limes sliced into quarters so they fit into the ice cube trays or raspberries.
