Caramel Frosting

Ingredients

  • 1/2 cup softened butter
  • 1 cup packed dark brown sugar
  • 1/3 cup plus more as necessary heavy cream
  • 1 tablespoon pure vanilla extract
  • 1 (16 oz) box confectioner's sugar
  • 2 cups optional for garnish finely chopped black walnuts

Directions

Melt butter in saucepan. Add brown sugar and cream. Cook over medium-low heat for about 2 minutes, until the sugar is dissolved. Remove from heat and add vanilla. Transfer to a large bowl.

Using a handheld electric mixer, beat in confectioner’s sugar until smooth. If frosting is too thick, add 1 tablespoon heavy cream at a time until consistency is right.

I rarely cook or bake. When I was a very young girl my grandmother made me my favorite chocolate cake with carmel frosting. I've always wanted to try to duplicate it but had been told by many that carmel frosting was very difficult to make. So I never did. I'm visiting back home in Indiana and thought I should at least try. I did today using your recipe. I followed it precisely and it came out perfect. I sent pics to all of my friends, who now want me to make it for them. No longer intimidated by Carmel frosting. Thank you

Love this recipe! Pairs perfectly with my Caramel Macchiato Cupcake recipe! A few tips for problems I'm seeing: -For a more caramel flavor, cook butter/brown sugar mixture longer, allowing it to come to a low boil for several minutes. -To thicken, simply add more confectioner's sugar until you reach your desired consistency.

This frosting came out okay but it taste just like brown sugar, not caramel.
