Bourbon Pecan Pie: aka Douglas’ Dark Rum Pecan Pie

Servings: 6-8

Ingredients

  • 1 cup sugar
  • 3 tablespoons melted butter
  • 1/2 cup dark corn syrup
  • 3 large beaten eggs
  • 1 1/2 cups pecan halves
  • 2 tablespoons good quality bourbon
  • 1 (9 inch) unbaked deep dish pie shell

Directions

Preheat the oven to 375 °F.

In a medium bowl, stir together the sugar and melted butter. Add the corn syrup, eggs, pecans and bourbon, and stir until all ingredients are combined. Pour mixture into an unbaked pie shell, and place on a heavy-duty cookie sheet. Bake for 10 minutes. Lower the oven temperature to 350 °F, and continue to bake for an additional 25 minutes, or until pie is set. Remove from oven and cool on a wire rack.

I made this pie today from Paula's Southern Cooking Book . This recipe is leaving out some ingredients. The one in her cookbook has 1/2 stick of butter, tsp salt, tablespoon of all purpose flour, equal portions of light brown sugar and corn syrup (white) . It came out great

I have made this pie about 50 times. Everyone LOVES it! I just got 20 lbs of fresh pecans from my Auntie in Alabama. Gonna get busy and make some pies! Thanks Paula!!!

I have not fixed it yet but my doctor told me at the office today I looked like Paula Deen and people have been telling me that for years, so he says then you can bring us a Paula Deen pecan pie to thank us if you want to so bad. So I am going to bake this pie and take it to them. Unless you want to make it for me. Haha. Let you know how it goes!!! Had to rate to send but I am sure it will be right.
